Fast and Easy Cake Mix Cookies

Several years ago, a friend gave me the recipe for these cookies. They are now a staple of my holiday baking, because they are one of the yummiest and easiest cookies I have ever made.
German Chocolate Cake Mix Cookies
1 Pillsbury Moist Supreme German Chocolate Cake Mix
6 ounces semisweet chocolate chips
¾ cup rolled oats
½ cup oil
2 eggs, slightly beaten
Combine all ingredients, mix well. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheet. Bake 8-10 minutes at 350 degrees.
That’s it! Start to finish is less than an hour. This recipe yields approximately 4 dozen cookies.
I have also used different cake mixes and different add-ins. I knew someone once who did not eat chocolate, so I used a vanilla cake mix and crushed toffee bits. They were delicious. Oooh – how about a pumpkin cake mix with cinnamon chips? Or a spice cake mix with white chocolate chips? Triple chocolate cake mix with chocolate chips?
No, that last one would just be wrong.
These are so easy! I have taken them to parties and sent them to work with my husband to give to co-workers.
My favorite way to package them for giving away is to pack them into little 1-pound white candy boxes (they sell them flat in the candy section of craft stores and you fold them yourself). I then get a roll of wide tulle ribbon and tie a big bow. The whole package is thoughtful and elegant, yet simple and easy. Perfect!
